Wine
Fill chilled wine glass halfway with ice. Add wine, Aperol, and seltzer. Use bar spoon to gently lift mixture to combine. Top with additional ice. Pinch orange peel above drink and rub on outer edge of glass. Garnish with the orange peel and olive (optional).
